I just bought a Rebel XT last month after trying several 5mp $300-$400 cameras DRock. I'm VERY happy with my purchase. I haven't regretted it for a moment. I've got a polarizer filter (really a must) and 2-1GB cards, and a card reader (it's safer than plugging the camera into the computer). With that, you should be pretty set. I suspect I may be getting a few more accessories in a couple weeks though :)
I did a lot of research and compared side by side images. The Rebel XT beat out every other shot I saw for one reason or another. Now... if I can only learn how to properly use the damn thing :)

I have the XT and absolutely love it!! An external flash is the best thing I bought to go with it. I take a great deal of pictures in a gym and it has been a life saver!!

I have the Canon 20d and the one thing I have found is to have an extra battery (keep it charged) and an external flash. If you can afford it get the Canon Speedlite 530EX, or 430EX. They are TTL's (through the lens) and telephoto flashes that provides the correct amount of light on the focused subject. The 530ex is about $550 (us) and the 430 is about $250 (us)
I know you will enjoy the new camera. Have fun.
Here is a 550 at Amazon (http://www.amazon.com/gp/product/product-description/B00004THM7/ref=dp_nav_2/104-7907437-1623931?%5Fencoding=UTF8&n=502394&s=photo) New price of $300 which is good.
Here is the 430 Amazon (http://www.amazon.com/gp/product/product-description/B000AO3L84/ref=dp_nav_2/104-7907437-1623931?%5Fencoding=UTF8&n=502394&s=photo) Price here is $244.

Look into some extra lenses .. Canon L Glass if you can afford them but for your rebel don't over capitalise. Read up on good lense reveiws as to what you intend to do with it. http://bobatkins.photo.net/photography/ has practical Canon advise on lenses etc
