Is it possible to add a gradient to just outlines and not fills?

No. Strokes can't be gradients. However you can choose Object > Expand and just check the stroke option. Then your stroke is a shape which CAN be a gradient.

Thanks Jolt! Awesome news! Just imagine a set of sheets (400 thread count Egyptian cotton of coarse) with a hard edge!

There is a way but it is somewhat difficult:
1. draw a line with 1pt weight
2. say object > path > outline stroke
3. make in this OBJECT you now have the gradient that you would like
4. say object > expand and put in a lot of steps (eg 200)
5. deselect and then select the outer vector which has no fill or border (it is there I'm sure!) and throw it away
7. now drop the remaining "gradient" on the brush palet > art brush
8. choose the object that needs the gradient stroke > give it the brush as a stroke
9. vary the weight of the stroke in the stroke palet.
You cannot change the colour, you'll have to remake the whole thing for changes.
