When I go into quick mask, I normally do the edges all the way 'round my selection and then I grab the paint bucket to fill it in. Doing this always leaves a border inside my edges which I need to go back and correct (an unneccessary third step imo.) Is there a way to fill the area without leaving that annoying space between the red areas?

Using a hard edged brush leaves less of a border, then filling with the bucket a second time finishes it off.

What do you mean less? I'd like to forego the third step altogether; is it possible?

Well, you can use a hard edged brush as d2e2 pointed out... in the brush palette click the text "Brush Tip Shape" and move the hardness slider all the way to the right. But doing that means you don't get a soft edge against your object either.
What I do is create a loose selection around the object first with the lasso, polyagonal lasso or pen tool. Then apply a layer mask. Layer masks are a bit better than quick mask because you can edit your layer mask later... can't do that with quick mask. Then grab a brush and paint around the object edges.
The "gap" you see is due to the brush feathering. Soft edges of the brush are seen in the mask mode so Photoshop detects a pixel and the paint bucket won't cover that pixel.

You can forgo the third step if you call the second step "double-click with the paint bucket".
